David Gentilcore


David Gentilcore is Professor of Early Modern History at the University of Leicester (UK) and in 2017-18 was EURIAS senior fellow at the Institut d’études avancées, Aix-Marseille Université (France). He has written widely on food-related topics, including the reception of New World foods into Italy. His most recent book is Food and Health in Early Modern Europe (London: Bloomsbury, 2016).
